Roasted Butternut Squash Polenta with Camembert

Butternut Squash is in season in Ohio from later summer through mid-winter. Sweeter than most winter squash, the taste is more balanced than acorn or pumpkin, with a slightly nutty undertone perfect in soups, risotto, or in this hearty Polenta that serves a crowd.

Fresh Corn & Goat Cheese Polenta

This recipe is my go-to brunch favorite. A warm, comforting polenta (with goat cheese, of course) goes well with Shrimp or sausage. It's Bobby Flay's version of Grits, and oh so good. Enjoy with roasted cherry tomatoes on the side.
